BANANA CREAM PIE | |
1/2 c. sugar 5 tbsp. salt 2 c. milk 2 egg yolks, slightly beaten 1 tbsp. butter 1/2 tsp. vanilla 3 ripe bananas 1 baked 9 inch pie shell Combine sugar, salt, flour in top of double boiler; add milk slowly, mixing thoroughly. Cook over rapidly boiling water until thickened, stirring constantly. Cook 10 minutes longer, stirring occasionally. Stir small amount of mixture into egg yolks, then pour back into remaining mixture while beating vigorously. Cook 1 minute longer. Remove from heat and add butter and vanilla. Cool, peel and slice bananas into pie shell and cover immediately with filling. Top with meringue made with egg whites. MERINGUE: 2 egg whites 1/4 tsp. water (warm) 1 tbsp. sugar Whip egg whites and water by hand until just stiff. Add the sugar slowly. Brown in oven at 350 degrees until lightly brown. |
