CHEESY POTATO CASSEROLE 
4 eggs, separated
4 c. cooked, mashed potatoes (fresh or instant, according to pkg.)
1 1/2 c. shredded sharp Cheddar cheese
1/2 sm. onion, chopped fine
1/2 sm. green pepper, chopped fine
1/4 tsp. parsley flakes
Salt and pepper to taste
Paprika (for color)

Preheat oven to 375 degrees.

Grease a 3 quart or 9x13 inch pan.

Using a mixer, beat egg yolks into potatoes until well mixed. Blend in cheese, and remaining ingredients (except paprika). Make ahead to this point. Refrigerate.

Just before baking, beat egg whites until soft peaks. Fold into potato mixture. Spoon lightly into baking dish. Sprinkle with paprika. Bake, uncovered, at 375 degrees for 25-30 minutes, until golden brown. Serves 8-10.
