EASY CHEESY SOUP 
2 c. carrots, finely chopped
1/2 c. celery, finely chopped
1/2 c. onion, finely chopped
3 1/2 c. chicken broth
4 c. milk
1/2 c. all-purpose flour
2 c. (8 oz.) American cheese, shredded

In a saucepan, mix carrot, celery and onion; add chicken broth. Heat to beaming; reduce heat Cover and simmer for 15 minutes. Combine milk, flour and 1/8 teaspoon salt. Stir into broth mixture. Cook and stir until thickened. Add the cheese, stirring until melted. Garnish with chopped peanuts if desired. Makes 12 servings.
