LEMON CHICKEN AND RICE 
2 1/2 - 3 lb. raw chicken, cut into 1" chunks
1/2 tsp. paprika
1/2 tsp. oregano
1/2 tsp. lemon peel
Juice of 1 lemon
1 c. uncooked rice
1 can chicken broth
Salt & pepper
2 tbsp. vegetable oil (or more)

Season the chicken with paprika, oregano, lemon peel, salt and pepper. Saute in small amount of vegetable oil until chicken is browned on all sides. Squeeze lemon juice over cooked chicken. Add rice and chicken broth. Cover and simmer 20 to 25 minutes. (Seasonings may be adjusted to individual tastes.)
