LEMON-MUSTARD CHICKEN 
6 skinned chicken breast halves
1/4 c. butter (corn oil butter)
3 tbsp. Dijon mustard
3 tbsp. lemon juice
1 tsp. tarragon
1/2 tsp. salt

Preheat oven to 375 degrees. Place chicken in shallow baking pan. In small saucepan, melt butter. Stir in mustard, lemon juice, tarragon and salt. Pour over chicken.

Bake chicken for 45 minutes or until cooked through. Spoon sauce from pan over chicken. Serves 6.
