TOMMYE'S JELLY ROLL 
4 eggs
3/4 tsp. baking powder
1/4 tsp. salt
3/4 c. sugar
1 3/4 c. sifted cake flour
1 tsp. lemon extract
Little grated lemon rind

Break eggs in bowl with baking powder and salt. Set the bowl in hot water and beat the eggs until light and foamy. Add sugar gradually, beating well between each addition. Remove bowl from water and fold in sifted flour, lemon extract and grated lemon rind. Turn into a greased and paper lined pan (shallow pan) or 2 small pans. Bake in oven at 499 degrees for 12 to 14 minutes.
