ITALIAN ALMOND COOKIES | |
4 tbsp. corn oil 3 egg (XL) 1 c. sugar 1 tsp. vanilla 3/4 c. toasted almonds 2 1/2 c. cake flour 3 tsp. baking powder 1 tsp. almond or anise extract Mix oil, sugar, vanilla and almond extract until light and foamy. Add sifted dry ingredients and almonds. Mix with a spoon. Shape into 3 rolls. Bake at 350 degrees for 18 to 20 minutes. Cool a bit. Slice on diagonal and lightly broil both sides. You may add orange or lemon peel for variety. |
