CREAMY RAISIN SPREAD 
1 egg, beaten
1 c. sugar
1 c. chopped raisins
1 c. mayonnaise
3 tbsp. lemon juice
1 tbsp. butter
1/4 tsp. grated lemon rind
1/2 c. finely chopped pecans

Combine first 7 ingredients in a heavy saucepan. Cook over low heat until thick and bubbly, stirring constantly. Stir in chopped pecans; let cool. Serve with Melba rounds or use as a sandwich spread.
