EGGPLANT CREOLE 
1 eggplant (male)
1 med. green pepper
1 can tomatoes
1 med. onion
Flour
Bacon grease (or pan spray)

Slice eggplant and soak in salted water for 1 hour. Cut up tomatoes, green pepper and onion. Mix together and add salt and pepper to taste. Flour eggplant slices and fry. Layer eggplant slices and vegetable mix in casserole dish. Bake at 350 degrees for 1 1/2 hours.
