FESTIVE EMERALD SALAD 
1 head lettuce
1/2 lg. green pepper, chopped
7 scallions, chopped
7 radishes, chopped
1 avocado, peeled & diced
1 sm. jar marinated artichoke hearts, drained & sliced
1 sm. jar green olives with pimento, drained & sliced
1 lg. tomato, diced (optional)
6 lg. mushrooms (optional)

Prepare all salad ingredients in bowl. Prepare dressing in large jar and shake until creamy. Spoon dressing over salad and mix. Serve immediately.

DRESSING:

1 (8 oz.) jar mayonnaise (no substitute)
4 tbsp. white horseradish
3 tbsp. milk
