RHONDA'S STUFF 
1 lb. ground round steak, chicken or turkey
1 med. onion, chopped
1 lb. grated Cheddar cheese
10-12 tortillas, quartered
1 can chopped Rotel chilies
1 can mushroom soup
1 can cream of chicken soup
1 lg. can evaporated milk
Spices to taste: salt, pepper, cumin, chili powder & cayenne

Toss together cheese and onions. Brown meat with spices. Drain. Add Rotel, milk and soups to meat mixture. Simmer 15-20 minutes.

In large casserole dish layer tortillas, meat mixture and cheese/onions. Repeat using all ingredients. Beat at 350 degrees for 45 minutes. Watch to see, cheese doesn't burn. Serves 4-6.
