RICE CASSEROLE 
1 3/4 c. cooked rice
1 huge onion, chopped
2 cans beef consomme
1 lg. can mushrooms
1 lb. cheddar cheese, grated
3 or 4 tomatoes, cut into wedges
1 c. slivered almonds
1/4 lb. butter

Saute onions in melted butter. Mix all ingredients, pour into baking dish and bake, uncovered for 1 1/4 hours at 325 degrees.
