PUMPKIN OR SQUASH PIE 
4 eggs
3/4 c. sugar
1/4 tsp. salt
1 tsp. ginger
1 tsp. cinnamon
1/2 tsp. nutmeg
2 tbsp. butter, melted
1 1/2 c. pumpkin or squash, cooked
1 1/2 c. evaporated milk

Beat eggs and add sugar, salt and spices. Mix well (may use a blender). Add butter, pumpkin and milk and mix until well blended. Pour into unbaked pastry crust.

Bake at 450°F for 15 minutes. Then finish baking at 350°F for 30 minutes or until knife inserted into center of pie comes out clean.
