EGG PLANT ITALIANO 
1 med. eggplant
1-2 tsp. oregano
1 (6 oz.) pkg. Mozzarella cheese
2 c. (8 oz.) tomato sauce
1/2 c. shredded sharp cheese

Spread 2 tablespoons tomato sauce on bottom of 2-quart microwave dish. Pare eggplant; slice 1/8-inch thick. Layer half of eggplant and 1 can tomato sauce, half of oregano, and half of sharp cheese. Repeat layers.

Cover and microwave on HIGH for 14-16 minutes. Add Mozzarella cheese; microwave 1-2 minutes until cheese is melted. Serves 4-6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
