GREEN BEAN CASSEROLE AND PILAF | |
2 lb. fresh green beans 1 tbsp. oil 1 lb. cubed beef or lamb 1/2 c. green pepper, chopped 3 to 4 cloves garlic, peeled and sliced 1 c. ground tomatoes 1/2 c. c. water 1 tsp. salt 1/2 tsp. freshly ground black pepper String the beans, wash and cut into 1 inch pieces. In a large, heavy pot heat the oil and brown the meat. Add beans, green pepper and garlic. Cover and stir occasionally for 10 to 15 minutes. Add tomatoes and water, salt and pepper. Simmer for 40 to 45 minutes or until meat and beans are tender. Add seasoning toward the end of cooking time. Serve with Rice Pilaf. Serves 6. RICE PILAF 1 tbsp. vegetable oil 1/4 c. orzo (rice shaped pasta) 3/4 stick of butter 2 c. rice (UNCLE BEN'S® converted, NOT INSTANT) 2 c. chicken broth 2 c. water 2 tbsp. salt (or to taste) |
