SHINY PINK AND WHITE PEPPERMINT
PATTIES
 
1 pkg. (1 lb.) powdered sugar
3 tbsp. light corn syrup
3 tbsp. water
1/2 tsp. peppermint extract
Red food coloring

1. Combine powdered sugar, corn syrup and water in the top of a double boiler. Heat over simmering water (do not allow water to boil or steam will dull the tops of the shiny patties), stirring several times, until sugar dissolves and mixture is smooth.

2. Remove from heat, but let mixture stand over hot water to keep soft for shaping. Stir in peppermint extract.

3. To make white candies, drop half of mixture, a teaspoonful at a time, onto cookie sheets to form 1 inch rounds. Let stand until firm.

4. To tint candies, stir a few drops of red food coloring into remaining mixture in top of double boiler, then shape, following directions in Step 3. Let stand until firm.

These mints may be decorated with dainty leaf or flower design, using decorating frosting.
