SAUSAGE CASSEROLE 
2 lb. sausage (Jimmy Dean)
3 c. celery (cut thin)
1 lg. green pepper
2 chopped onions
8 c. water
4 pkg. (2 boxes) Lipton chicken noodle soup mix
1 c. rice

Cook meat, crumbling as it cooks. Remove with slotted spoon. Saute vegetables in pan drippings until limp but not brown. Cook soup and rice in 8 cups water for about 6-7 minutes. Combine all ingredients. (Can be frozen at this point and baked later.)

Bake 1 hour in 350 degree oven. Cover for first 40 minutes. Makes 3 quart casserole or serves 12. When making 1/2 the recipe reduce baking time to 35 minutes.
