APPLESAUCE FRUIT CAKE | |
3 c. unsweetened applesauce 1 c. butter 2 c. sugar 4 1/2 c. flour 4 tsp. baking soda Brandy (optional) 1 tsp. nutmeg 1/2 tsp. salt 1/2 tsp. cinnamon 1 lb. mixed fruits 1 lb. raisins 1 lb. currants 1 c. walnuts or pecans Combine applesauce, butter and sugar; set overnight. Next day, add remaining ingredients. Bake in a slow oven at 350 degrees for about 1 1/2 hours. Makes 3 loaf-size cakes. Put in well buttered loaf-size pans and cover with waxed paper to prevent raisins from burning. |
