EGGLESS APPLESAUCE FRUIT CAKE 
3 c. strained applesauce, sweetened or unsweetened
1 c. shortening
4 1/2 c. flour
2 c. sugar
4 tsp. baking soda
1 tsp. nutmeg
2 1/2 tsp. cinnamon
1/2 tsp. cloves
1 tsp. salt
1 lb. dates
1 lb. raisins
1/4 lb. each of nuts, candied cherries, pineapple and citron

Boil together for 5 minutes the applesauce, sugar and shortening. Let stand overnight. Dredge chopped fruit and nuts with flour, soda, salt and spices, which have been sifted together.

Bake in lined pans in a slow 250 degree oven for 2 1/2 hours or until done. Fill pans about 2/3 full. Makes 5 loaves.
