APPLESAUCE WALNUT MUFFIN 
1/3 c. butter
1/3 c. brown sugar
2 egg whites
3/4 c. unsweetened applesauce
1/2 c. skim milk
1 1/2 c. unbleached flour
1 c. oat bran
1 tsp. cinnamon
1 tsp. baking powder
1/4 tsp. nutmeg
1/4 c. chopped walnuts

Preheat oven to 375 degrees. Put paper liners in 12 muffin cups. In a large bowl combine butter and sugar: beat well. Add egg whites and mix together thoroughly. Stir in applesauce and milk. Stir together flour, oat bran, cinnamon, baking powder and nutmeg. Add the dry mixture to the creamed mixture, mixing just until dry ingredients are moistened. Do not over mix. Stir in walnuts. Fill muffin cups 2/3 full. Bake 20 minutes or until lightly browned. Cool on wire rack.
