APPLE STRUDEL | |
DOUGH: 2 1/2 c. flour 1/2 c. oil (use to work dough with) 1 tsp. salt 2 tbsp. oil 2 eggs 2 tbsp. sugar 1/2 c. real warm water Place flour and salt into a bowl, make a well in the center and put in the oil, eggs, sugar and water. Work with a fork until most of the flour is worked in. Turn the dough onto the table or bread board and work the dough at least 20 minutes. If dough is too soft, add small amount of flour (a little at a time) being careful so dough doesn't get too hard. Put dough into a bowl, rub with oil, cover with Handi-Wrap. Let set at least one hour or longer in a warm place. BREAD CRUMBS: Make buttered bread crumbs with 2 cups bread crumbs browned in 1/2 cup butter. (Can be made the night before.) FILLING: 3 lbs. apples, wash, peel, core & thinly slice 3/4-1 c. sugar (depending on tartness of apples 1/2 tsp. cinnamon Melted butter When the dough is ready, place it in the center of a floured cloth and pull it apart about 18" in diameter. Then brush dough with oil. Now flour both hands and reach under the dough. With the back of the hands start stretching the dough carefully from the center toward the outside walking around the table as necessary. Don't raise your knuckles too high. Work gently or you'll puncture the dough. Stretch the entire dough paper thin. Spread 2/3 the length of the dough with buttered bread crumbs. Then spread the apples on top of the bread crumbs. Then sprinkle the apples with sugar and cinnamon. Then sprinkle with melted butter. Now lift the corners of the cloth from the end covered with filling and start to roll the dough, jelly roll fashion, by pulling the cloth upwards. Shape the strudel in a U shape, then put in a 9"x13"x2" pan or cookie sheet. Bake on lowest rack at 400 degrees for about 1/2 hour if browning too fast, reduce to 350 degrees and continue baking for another 45 minutes until golden brown. If desired you can make cottage cheese with crushed pineapple, drained or other fruits. With peaches or other fruits who are very juicy you need to thicken fruits before spreading on strudel dough. |
