OKRA FRITTERS 
2 eggs, lightly beaten
3/4 c. beer - alcohol cooks away
1 tbsp. peanut oil
3/4 c. all-purpose flour
1 1/2 tsp. salt
1 tsp. black pepper
1/2 tsp. cayenne pepper
1 tbsp. baking powder
2 lbs. okra, sliced
Oil for frying

Mix first 7 ingredients in a blender. Let sit for 1 to 2 hours. Stir in baking powder, and add okra. Heat 1 inch of oil in skillet until hot, but not smoking. Drop batter from a tablespoon without crowding fritters. Turn and brown both sides. Makes about 36 fritters.
