POTATO BOATS WITH BEEF 
1 pound lean ground beef
1/2 cup chopped onion
1/4 cup chopped green peppers
1 tsp salt
1/4 tsp pepper
1 (8 oz) can tomato sauce
4 medium potatoes, baked
1 cup shredded cheddar cheese

Brown beef, onion, pepper in skillet. Drain off fat. Add seasonings and tomato sauce. Cut potatoes in half length wise. Scoop out and reserve shell.

Mash the potato, combine with meat mixture. Put into potato shells and place in baking dish. Sprinkle cheese on top.

Bake 15 minutes at 400°F.

Makes 4 - 8 servings, depending on size of potatoes. May be prepared in your microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
