RED WHITE AND BLUE STRAWBERRIES
1 pint fresh strawberries
8 (1 oz. ea.) sq. white baking chocolate
1 (2 oz.) bottle blue decorating sugar
cooling rack covered in paper towels to dry washed berries
baking sheet lined with wax or parchment paper

Wash strawberries and allow to dry completely. Pour the decorating sugar into a small bowl or cup so that you can dip chocolate covered berries into it.

In a small bowl, deep enough to allow you to dip berries in 3/4 of the way up, melt the white chocolate. Be sure to melt the chocolate slowly, stirring about every 30 seconds, so that you do not burn the chocolate.

Once you have the chocolate evenly melted you can begin dipping the berries in. Dip them one at a time holding the stem/leaves firmly and allowing the excess chocolate to drip off. When enough chocolate has fallen away and it looks as if the chocolate is setting on the berry gently dip or roll in the colored sugar about half way up the chocolate covered portion. Set on to baking sheet lined with wax or parchment paper and continue until you have finished all berries. I placed them in the refrigerator to help set the chocolate before transporting them.
