BAKED WILD DUCK IN BROWN - IN -

1 duck
Melted butter
Salt
Chopped apple and celery
1 tbsp. flour
1 c. orange juice

Preheat oven to 350 degrees.

Shake 1 tablespoon flour in small size (10x16) Brown-In-Bag and place in 2-inch deep roasting pan. Pour orange juice into bag and stir until flour is well mixed. Brush duck with butter and salt cavity and outside.

Fill cavity with chopped apple and celery. Place duck in bag. Close bag with twist tie and make 6 (1/2-inch) slits in top. Cook 1 1/2 hours.
