RHUBARB BRUNCH CAKE | |
1 pkg. yellow cake mix 1/3 c. oil 4 c. sliced rhubarb (fresh or frozen & thawed) 1 c. water 3 eggs 1 c. sugar 1 pt. whipping cream Combine cake mix, water, oil and eggs at low speed until moistened. Beat 2 minutes at highest speed. Pour into greased and floured 9"x13" pan; top with rhubarb and sprinkle with sugar. Pour cream over top. Bake at 350 degrees for 1 1/4 to 1 1/2 hours or until toothpick inserted in center comes out clean. Serve warm. Yield: 12 servings. |
