BELL PEPPER CASSEROLE | |
1 lb ground beef 1 tbsp. minced garlic 1 onion, diced 2 green bell peppers, diced olive oil 1 large jar marinara sauce (I use Barilla) 3 cups Minute Rice shredded Italian cheese blend season to taste (I use Badia complete seasoning) salt In a large skillet, heat olive oil over medium heat; add garlic, onion and bell pepper. Add a little salt to bring out the flavors. After about 5 minutes, brown the meat with the mixture and season. I use lean ground beef so draining is not needed so no flavor is lost. Add marinara sauce to mixture and heat through (leave a little sauce in jar). In a separate pot, make your 3 cups of Minute Rice. When done add to mixture and mix well put all of it in casserole dish add remaining marinara sauce to the top and add cheese blend and bake at 350°F for 10 minutes or until cheese is well melted. I can make this from beginning to end in 45 minutes or less it's so easy and tasty I hope you enjoy it. If you make this, please comment I would love to hear what you think! Rice Pilaf:
4 cups of chicken broth (I like mine moist)
1 cup of white (bulgur) rice
1/2 cup vermicelli
2 T. butter
Brown vermicelli and rice, add broth and simmer for 25 min.
or until rice is soft.
