VEGETABLE MATZAH KUGEL 
2 lg. onions, diced
1/4 c. oil
2 stalks celery, diced
1 green or red pepper, diced
1 tsp. salt
1/4 tsp. pepper
4-6 eggs, beaten
6 matzahs

Saute onion, celery, and green pepper. Moisten matzah pieces in hot water. Squeeze out. Combine with vegetables and eggs. Pour into well greased 9 x 13 inch pan. Bake at 350 degrees, 45 minutes.
