LEMON AVOCADO SOUP | |
1 lg. ripe avocado 2 (8 oz.) c. lemon yogurt 1/2 tsp. salt 1 c. milk 3 tbsp. minced scallions Mint leaves Peel avocado and cut into chunks. Put in blender with milk, yogurt, scallions and salt. Blend until smooth. Sprinkle with fresh mint leaves. Approximately 3-4 servings. |
