SOPHIE'S OLD FAMILY BREAD | |
2 pkgs. fast rising yeast in 1 c. very warm water (120 to 130 degrees) 2 tbsp. sugar 2 tsp. salt 2 tbsp. butter, melted 5 c. very warm water 14 c. (approximately 5 lbs.) bread flour, or all-purpose Prepare yeast, sugar and salt in measuring cup, let stand until frothy. Pour melted butter in very large bowl, add yeast, 5 cups very warm water, and 7 heaping cups of flour. Blend together with hand mixer until well blended. Mixture will be soupy. Cover with towel and place in oven with oven light on. Let raise approximately 1 hour. Add 7 more heaping cups flour to stiffen. Knead dough until thoroughly blended, spread butter on dough. Cover with towel and place in lighted oven to raise, approximately 1 hour. Beat down dough and knead bread, split into five portions. Shape loaves and place in buttered bread pans. Cover with towel and place in lighted oven until loaves double in size. Bake for 30 minutes at 400 degrees. If desired make four loaves bread and a batch of rolls, or pizza crust. |
