GOLDEN MUSHROOM FRITTERS 
1 c. packaged biscuit mix
1 c. chopped fresh mushrooms
2 tbsp. sliced green onions
1 tbsp. chopped pimento
1 egg white
1/4 tsp. salt
1/4 tsp. celery seed
1 beaten egg yolk
1/4 c. sour cream
Cooking oil for deep frying

In a mixing bowl combine biscuit mix, mushrooms, onion, pimento, salt and celery seed. Mix together egg yolk and the sour cream. Stir into dry ingredients just until moistened. Beat egg white to stiff peaks. Gently fold beaten egg white into mushroom mixture.

In a heavy saucepan or electric deep fryer, heat oil to 375 degrees. Drop batter by tablespoonful into hot oil. Fry about 2 minutes or until brown, turning once. Drain. Serve hot. Makes 12.
