APPLESAUCE BRAN PANCAKES 
3/4 c. skim milk
3/4 c. applesauce
1/2 c. egg substitute
2 tbsp. butter, melted
3/4 c. 100% bran cereal
3/4 c. all-purpose flour
2 tbsp. sugar
1 tbsp. baking powder
Maple flavor syrup, optional
Strawberries, for garnish

In small bowl, beat together milk, applesauce, egg product and butter. Stir in bran. Let stand 5 minutes.

In medium bowl, combine flour, sugar and baking powder. Stir in bran mixture just until blended. (Batter will be slightly lumpy.) Heat lightly greased griddle or skillet over medium-high heat. Pour scant 1/4 cup batter onto griddle or skillet for each pancake. Cook until bubbly; turn and cook until done. Makes 12 pancakes.
