NEW ENGLAND CLAM SPINACH QUICHE | |
1 pkg. frozen, chopped spinach 2 (9 inch) pastry shells 1/2 can bacon bits (real, not artificial) 1 (15 oz.) can Snow's clam chowder 4 eggs, slightly beaten 1 c. chopped onion 1/2 c. sour cream 2 tsp. parsley flakes 1/4 tsp. pepper 4 slices Swiss cheese Cook spinach. Preheat oven to 400 degrees. Bake shells (on cookie sheets) for 8 minutes. Reduce oven to 350 degrees. Combine bacon, chowder, spinach, eggs, onion, sour cream, parsley, and pepper. Pour part of mixture into shells; arrange cheese on top. Top with remaining mixture. Bake 50-55 minutes on cookie sheets. Let stand 20 minutes before eating. Note: 1 quiche may be covered and frozen for another time. |
