MEXICAN MEAT WITH CORNBREAD
TOPPING
 
1 lb. ground beef
1 tbsp. oil
2 c. cooked rice
1 (No. 1) can tomatoes
1 tsp. salt
1/2 tsp. pepper
1/4 to 1/2 tsp. chili powder
4 tbsp. grated onions
1 box Jiffy cornbread mix

Cook meat in oil until browned. Add rice, tomatoes (undrained), salt, pepper, chili powder and onions. Mix well, breaking meat and tomatoes into small pieces. Cook until thoroughly heated and most of the liquid is absorbed. Pour into baking dish. Mix cornbread and pour over meat mixture. Bake 25 minutes or until cornbread is done.
