GRAPEFRUIT PIE 
36 vanilla wafers, crushed (1 1/2 c.)
6 tbsp. melted butter

FILLING:

1 can condensed milk
1/4 c. lemon juice
2 tbsp. grated grapefruit rind
1 c. grapefruit pieces

MERINGUE:

2 egg whites
4 tbsp. sugar
Pinch of cream of tartar
1/2 c. flaked coconut

Mix wafer crumbs and butter together. Press in pie pan and chill.

Mix lemon juice and condensed milk and rind. Place grapefruit pieces in pie shell. Pour lemon mixture over grape- fruit.

Beat egg whites and cream of tartar until soft peaks form. Gradually beat in sugar. Beat until stiff but not dry. Fold onto top of pie - be sure to go to very edge of crust. Bake for 15 minutes at 350 degrees F.
