ITALIAN EGGPLANT | |
1 med. eggplant, pared and sliced 1/2 c. melted butter 1/4 tsp. salt 1 tbsp. oregano 3/4 c. dry bread crumbs 1 (10 3/4 oz.) can spaghetti sauce with mushrooms 4 oz. (1 c.) Mozzarella cheese Dip eggplant in butter, then in mixture of bread crumbs and salt. Place on greased baking sheet. Spoon sauce on top of each slice; sprinkle with oregano and cheese. Bake in hot oven (450 degrees) for 12 minutes. |
