CARROT FROSTING 
3 c. powdered sugar
1/3 c. butter
1/3 c. cooked sieved carrots
1 tsp. grated orange rind
2 tbsp. orange juice

Blend together sugar and butter, add carrots, orange rind and juice (add just enough juice to make a nice spreading consistency) and blend until nice and creamy. Makes about 2 cups of icing.
