CHOCOLATE WAFFLE COOKIE 
1 c. melted butter (or butter flavored Crisco)
3 eggs
1 1/2 c. sugar
2 tsp. vanilla
Dash of salt
1/2 tsp. baking soda
2/3 c. cocoa
2 1/2 c. flour (should look like thick pancake mix), add more flour if needed

Heat waffle iron. Blend first 4 ingredients together. Then fold in the remaining ingredients. (Dough will hold together better if refrigerated, about 1 hour; but isn't necessary). Roll into teaspoon size dough balls, and place into all sections of waffle iron. Bake about 1 one minute. Then place on cookie rack. If desired, mix up a thin batter of powdered sugar and dip top side of cookie to make a thin layer of frosting. Makes about 30 cookies.
