SPINACH PIE (NO CRUST) 
1 lb. spinach
1 lb. swiss chard or 2 lbs. spinach
1 tbsp. dried basil OR 1/2 c. fresh
1/2 c. chopped fresh parsley
Salt and pepper to taste
4 eggs
1/4 c. cream
Parmesan cheese

Greens:

Wash greens thoroughly (the spinach may need 4 washings). Cook briefly until just wilted. Drain in colander or strainer. Squeeze with hands to remove water. Add chopped basil, parsley, salt, pepper and chop together.

Press greens into pie plate (pyrex best). Beat eggs, add cream. Pour carefully over greens. Sprinkle with Parmesan cheese. Bake at 350 degrees about 45 minutes or until a knife inserted in the center comes out clean. Serve luke warm or cold.
