COTTON PICKIN' CAKE 
1 yellow cake mix
1 c. oil
4 eggs
1 can mandarin oranges
1/2 c. chopped pecans
1 lg. (16 oz.) container Cool Whip
1 lg. instant vanilla pudding
16 oz. can crushed pineapple
Frosting recipe below

Mix cake mix, oil, eggs, and liquid from oranges. Stir in oranges and pecans. Divide batter evenly in three 9 inch round greased and floured cake pans. Bake at 350 degrees until brown - about 25 minutes. Cool slightly; remove from pans to cool completely.

FROSTING:

Mix together whipped topping, pudding and drained pineapple. Refrigerate frosted cake until chilled. May be doubled and made in a two layer 13 x 9 inch sheet pan.
