FROSTED MANDARIN JELLO SALAD 
1 can (11 oz.) mandarin orange sections
2 pkgs. (3 oz. each) or 1 pkg. (6 oz.) Jello orange gelatin (use sugar free for a wonderful low calorie salad)
2 c. boiling water
1 pt. orange sherbet

Drain oranges, measuring syrup. Add water to syrup to make 1 cup. Dissolve Jello in boiling water. Add measuring liquid. Add sherbet by spoonfuls, stirring until melted. Chill until thickening.

Fold in oranges, reserving a few for garnish. Pour into a serving bowl. Chill until set. Garnish with orange sections and mint. 5 cups or 8 servings.

Use raspberry Jello, fruit and sherbet for a change.
