TIDEWATER TABOILI | |
1 c. cracked wheat 6 oz. V8 juice 1 med. peeled onion A few dashes hot pepper sauce 2 oz. olive oil 2 oz. lemon juice 2 c. parsley leaves Some mint leaves or 1 tsp. dried mint 2 c. chopped veggies (tomatoes, squash, celery, cucumbers, spring onion) Salt to taste Garnish - Romaine lettuce This Taboili started in the Middle East and evolved over 4 generations on 3 continents; hence its name. Put the wheat in a stainless steel bowl. Stir in the juice, oil, lemon and pepper juice. Run the mint, parsley and onion through your blender. When the wheat has begun to soften and absorb the juices, stir in the blender contents. Then the salt and vegetables. Cover and refrigerate 2 hours or more. Stir occasionally. Serve mounded on a platter. Scoop up with Romaine leaves. Forks are for sissies. Serves 4. |
