RIESKKA 
1 c. buttermilk
1 c. mashed potatoes
1/2 c. melted butter
1 tsp. salt
1 tsp. baking soda
1 c. barley flour
2 c. rolled oats, uncooked
2 c. all purpose flour

Put all ingredients into mixing bowl, adding them in order listed. Stir to make soft dough. Turn out onto a barley floured board and divide the dough into four parts. Roll each part out to make a circle 10" to 12" in diameter. Place on greased baking sheet and prick all over with a fork. Bake in a very hot oven, 450 degrees, for 10 minutes. Brush with melted butter. Serve hot. Makes 4 loaves.
