SELMA'S BEST OATMEAL COOKIES 
1 c. shortening
1 c. white sugar
1/2 c. brown sugar
1 beaten egg
1 1/2 c. all purpose flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 1/2 c. quick rolled oats
3/4 c. finely crushed nuts
1 tsp. vanilla

Mix shortening and sugar and cream together, add egg. Sift flour, salt, and soda and 1 teaspoon cinnamon, add to 1st mixture. Add oats, nuts, 1 teaspoon vanilla. Chill 1 hour, then place walnut sized pieces on a greased cookie sheet. Butter the bottom of a small glass dipped in granulated sugar and flatten out the cookies. Bake at 350 degrees for 8 to 10 minutes.
