ENCHILADA CASSEROLE | |
1 or 2 lbs. ground beef 1 lg. onion 2 or 3 pods garlic 1 tsp. chili powder 1 can enchilada sauce 1 can cream of chicken soup 1 can cream of mushroom soup 1 can tomatoes with green chilies (optional) 1 pkg. (10) soft corn tortillas cut into pieces 1 c. shredded Cheddar cheese Brown beef with onion and garlic. Add chili powder, enchilada sauce, cream of chicken soup, cream of mushroom soup, tomatoes with green chilies and mix well. Cut tortillas into pieces and line bottom of 9x13 casserole dish. Layer tortillas and meat mixture, then ads second layer. Top with Cheddar cheese. Bake at 350 degrees about 30 minutes or until well heated. |
