CRANBERRY ICE CREAM 
2 c. cranberries
1 1/4 c. sugar
1 pt. vanilla ice cream
Whipped cream (optional)

Preheat the oven at 350 degrees. Spread the cranberries in a buttered shallow baking dish and sprinkle them with the sugar. Cover with aluminum foil and bake for 1 hour. Cool. Soften the ice cream and quickly mix in the cooled cranberries, reserving 4 for garnishing if desired. Spoon the ice cream into a plastic container or individual serving glasses. Cover, and freeze until firm. If desired, decorate with dollops of whipped cream and a reserved cranberry atop each serving. Makes 4 servings.
