RICE PILAF 
1 c. UNCLE BEN'S® whole grain brown rice
1 can chicken or beef broth
1 med. onion, chopped
4-6 fresh mushrooms, sliced
Sliced almonds
3 tbsp. butter

Melt butter in saucepan on low. Add onion. Saute until onions are transparent. Add mushrooms and saute until cooked. Add a handful of almonds and stir. Add broth and enough water to make 2 2/3 cups of liquid. Bring to a boil and add rice. Cover rice and simmer on low for 50 minutes, until liquid is absolved. This can be made ahead and placed in a covered casserole with 2 tablespoons butter. When ready to serve, microwave for 2 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
