CRAWFISH FETTUCINI | |
1 1/2 sticks butter 3 stalks celery 1 bunch green onions 1 med. onion 1 bell pepper 3-4 pods garlic 1/3 c. flour 1/2 c. water 2 lb. crawfish tails 4 tbsp. parsley 1 (12 oz.) pkg. fettucini noodles 1 lb. box mild Mexican Velveeta cheese 1 carton half and half (pint) Parmesan cheese; optional Melt butter in Dutch oven. Saute onion, celery, bell pepper and garlic 12 minutes. Add flour; blend well. Add water and blend well. Cook over low heat a few minutes. Add crawfish and parsley; cook 15-20 minutes over very low heat. While mixture is cooking, prepare noodles according to package directions; set aside. Add cheese, cut in pieces, to crawfish and blend well. Add half and half, blend well. Add salt and pepper to taste. Then mix noodles and crawfish mixture. Place in buttered dish. Top with Parmesan cheese (optional). Bake, uncovered, at 350 degrees for 20 minutes or until done. Time may vary a little depending on oven. |
