RHODE ISLAND CLAM CHOWDER 
2 tbsp. salt pork, diced
3 tbsp. butter
1/4 c. chopped onion
1 c. boiling water
2 c. potato cubes
1 tsp. salt
1/8 tsp. pepper
2 cans minced clams
2 1/2 c. scalded milk or cream

Saute salt pork in butter until crisp. Add onion, cook until golden. Add water, potatoes, salt and pepper. Cover. Simmer until potatoes are soft. Add clams with liquid. Heat. Add milk but do not let come to a boil.
