STUFFED YELLOW SQUASH 
3 sm. firm yellow squash
2 tbsp. dry bread crumbs
2 tbsp. shredded sharp Cheddar cheese
Salt, pepper and onion to taste
2 tbsp. shredded sharp Cheddar cheese

Wash squash, simmer until tender. Drain and cool slightly. Slice in two lengthwise pieces. Scoop out centers and mash. Stir in bread crumbs, 2 tablespoons cheese, salt, pepper and onion. Mix lightly and return to squash shells. Top with cheese and bake 350 about 8 minutes, until slightly brown. Prepare ahead if desired; refrigerate. Bring to room temperature before baking.
